A better option for diabetics

Orange You Glad it's Carrot Cake

1 to 1.5 cups of Ideal brown sugar replacement
1 cup vegtable oil
3 large eggs
1.5 cups of course ground almond flour
1/2 cup of flax seed meal
1 tsp baking soda
1 tsp of cinamon
1/2 tsp of nutmeg
1 tsp of vanilla extract
3 cups of medium shredded carrot
Pre heat the oven to 350 degrees
 Grease a 9 by 13 " loaf tin

Mix the suar, oil and eggs together.Add the reat of the ingredients one at a time mixing all the time.
Cook for 30 mins (to test if it is cooked pierce the center with a knife and if it comes out clean its done)
Cool in the tin . 
Enough for 12 servings

Diabetic Carrot Cake Recipe

Diabetic Carrot cake ingredients
1/ 2 a cup grated carrots
1/4 cup of chopped dates
1 cup of raisons
1 1/3 cups of water
1/4 cup of unsweetened apple sauce
1 tsp of cinnamon
1 tsp of ground cloves ( optional)
1 tsp of nutmeg

2 cups of wholemeal flour *
2 cup Whole wheat flour
1 tsp of baking powder
1 tsp of baking soda
* if you prefer you can use white all purpose flour but dont use the baking powder and soda

For The Icing

8 oz of light cream cheese at room temp
5 tblsp of unsweetened pineapple or orange juice
1/2 tsp of vanilla extract
1/2 tsp of finely grated orange peel optional




Diabetic Carrot Cake Instructions


Pre heat the oven to 350 deg c


Place all ingredients except the flours into a pan and heat, simmer gentle fro 5 mins
Then leave to cool
Add the flours to the liquid mix and mix well untill all are combined
Spoon the mix into a 8" by 8" baking tin and bake for aprox 45 to 50 mins.

For the Icing

Whisk all the ingredients together untill smooth

I have been looking round trying to gather information and even though this is recomended from a diabetic website people are telling me its not recomended diabetics eat carbs and avoid fruit juices.So only use this recipe if you know its good for you to eat.
